Pumpkin Kheer

Delight your young ones with this Hyderabad special sweet recipe - Pumpkin kheer. It can be served hot or cold.

Ingredients

  • Peeled and grated pumpkin - 2 cup
  • Full fat milk - 2 ½ cup
  • Aashirvaad Svasti Pure Cow Ghee - 1 tbsp
  • Sugar - 5 tbsp
  • Cardamom powder - 1/3 tsp
  • Saffron strands - 5 to 6
  • Almonds – 5 to 6
  • Black Raisins - 8 to 10

Preparation

  • Squeeze out excess water from the grated pumpkin.
  • Heat Aashirvaad Svasti Ghee in a kadai and add the grated pumpkin to it.
  • Stir it over a low flame till all the moisture is absorbed. Now add milk and almonds, stir well and cook for around 8 to 10 min.
  • Add sugar, saffron strands, cardamom powder and black raisins. Stir well
  • Cook until mixture turns slightly thick.
  • Pumpkin kheer is now ready to be served.
